During a pastry demonstration, Frédéric Bau, pastry chef and chocolatier at Valrhona, left white chocolate in a bain-marie for a little too long. The result of this oversight surprised him: the chocolate had turned blond-colored and released a delicate smell of toasted shortbread and caramelized milk!
