Origin of the Dulcey 35% chocolate bar
During a pastry demonstration, Frédéric Bau, a pastry explorer at Maison Valrhona, forgot some white chocolate in a bain-marie. This blunder would revolutionize the world of chocolate! The result was spectacular: the chocolate had become blonde-colored and released a delicate aroma of toasted shortbread and caramelized milk. Several years of research would then be necessary to reproduce this delicious experiment! The name Dulcey was then chosen to evoke the sweetness that characterizes this blonde-colored chocolate.
Chocolate Tasting Tips
When tasting the Dulcey 35% chocolate bar, appreciate its melting texture, its intense biscuit notes and a slight hint of salt. Its enveloping smoothness gives it a reassuring and gourmet side.
FAQs
FAQs
Is Dulcey white chocolate?
Technically, it’s a “blonde” chocolate. It contains cocoa butter like white chocolate, but its caramelized milk and sugar give it a richer color, deeper flavor, and less sweetness.
What’s the best way to taste it?
Let it melt slowly on your tongue to enjoy the full evolution of flavors: first buttery and milky, then biscuity and gently salty. It pairs beautifully with coffee, tea, or a glass of Champagne.
Is Dulcey 35% made in France?
Yes, like all Valrhona chocolates, Dulcey is crafted in Tain-l’Hermitage, France, where expertise and creativity meet to produce world-renowned chocolate.
Why is it called “Dulcey”?
The name comes from the Spanish word “dulce”, meaning “sweet.” It perfectly captures the gentle, milky sweetness and comforting warmth that define this chocolate.
How was Dulcey invented?
Frédéric Bau, Valrhona’s creative pastry explorer, forgot white chocolate in a bain-marie during a demonstration. When he returned, the chocolate had turned golden and smelled like toasted cookies: and Dulcey was born after years of perfecting that happy mistake.
