In 2012, Valrhona innovated and invented Dulcey chocolate. This chocolate is made from caramelized white chocolate. With its blonde color, Dulcey 35% chocolate reveals a smooth and enveloping texture. Its sweetness and its biscuity and slightly sweet taste give way to generous notes of shortbread with a hint of salt. An innovation born from an oversight, but the fruit of Valrhona expertise
Like other mistakes or omissions in the field of pastry (the Cambrai misdeeds or the Tatin tart), Dulcey chocolate was born from inattention. Indeed, it was during a cooking demonstration in Japan that Fréderic Bau, busy with other work, forgot his white chocolate that he had put in a bain-marie for more than 15 hours. When he noticed this omission, the chocolate had changed to a delicate blonde color with an odor of toasted shortbread and caramelized milk. It still took Valrhona eight years of research and development to obtain the final version of this Dulcey chocolate.
