1. The tempering technique

Ingredients :

All Valrhona chocolates can be used to make this recipe, as well as the Inspiration range .



Steps

    • Weigh out a certain amount of chocolate.
    • Melt 2/3 of this quantity either in a double boiler or in the microwave.
    • Raise the temperature to 45-50 °C for milk chocolates and 50-55 °C for dark chocolates.
    • Once this temperature is reached, add the remaining 1/3 of the initial unmelted quantity.
    • Mix together and then blend using an immersion blender. Be careful not to incorporate air.
    • Take the temperature of the chocolate, which should be 29-30 °C for milk chocolates and 31-32 °C for dark chocolates.
    • For Inspiration , heat to 40-45 °C then ensure you have a working temperature between 31-32 °C.
    • The chocolate is now tempered. Be sure to maintain the chocolate at this temperature throughout the process. If necessary, warm the surface with a hairdryer.

2. Molding

Fill the chocolate molds

  • Using tempered chocolate, fill egg halves of different sizes.
  • Turn over, let the chocolate drain for a few moments, then begin crystallization. Trim with a knife to create clean edges.
  • Before the chocolate has fully crystallized, you can mold it a second time (optional step depending on the desired thickness).

  • Allow to crystallize, trim again and place in the refrigerator for 5 minutes.
  • Then leave at room temperature (ideally between 18-20 °C) until it releases from the mold on its own.

Assembly of the 2 sides

  • Next, stick the egg halves together to make whole eggs.

How do you melt chocolate for molding?

Melt the chocolate in a double boiler, respecting the specific temperatures. Pour the chocolate into a metal container that doesn't touch the water, stir regularly, and monitor the temperature with a thermometer. Once melted, keep the chocolate between 20 and 30°C for optimal molding. Microwaving can be used instead of the double boiler method.

Why is it necessary to temper chocolate?

Tempering chocolate is an essential step in making molded chocolates, bars, or decorations. Rather than melting the chocolate and letting it harden (crystallize) directly, a precise temperature curve is followed. This temperature curve ensures that the chocolate crystals are well-ordered during hardening. The result is a beautiful chocolate texture: shiny, crisp, and free of bloom.

How do you harden chocolate in a mold?

Once the chocolate is poured into the mold, place it in the refrigerator for 5 minutes to harden quickly. Remove any excess chocolate from the edges with a spatula before it crystallizes. To ensure a perfect texture, then let it set at room temperature (18-20°C). Avoid the freezer, as it could dull the shine of your molded chocolates. Do not leave it in the refrigerator for more than 5 minutes, as the temperature is too low and the humidity too high for the chocolate, and you risk developing a bloom (developing a  white coating).

How to properly unmold chocolate?

For easy unmolding, leave the mold in a warm place between 18 and 20°C . Carefully turn the mold upside down on your work surface and lightly tap it with the back of a knife to loosen it. The chocolate should release naturally as it shrinks.
