GUANAJA'S STORY BEGINS IN TAIN-L'HERMITAGE

In the heart of France's Rhône Valley, Valrhona's visionary managing director, Antoine Dodet, set his teams an unprecedented challenge: create a dark chocolate with a level of intensity never achieved before.


The result would boldly feature 70% cocoa content—a true revolution at the time.


To make it possible, Valrhona rethought its creative process, introducing rigorous cocoa selection, blind tastings, and a more structured approach to sensory analysis.


In 1986, Guanaja was born. Intense, innovative, and unlike anything that had come before it, Guanaja quickly became a new benchmark for exceptional dark chocolate. Its arrival also helped inspire the creation of L'École Valrhona, a place dedicated to sharing knowledge and supporting the creativity of artisans.

The signature creation was designed by David Briand, Meilleur Ouvrier de France for Pastry and Confectionery and Executive Pastry Chef at L'École Valrhona—which, like Guanaja, also came into being in 1986.


Through relief, layers, and textures, the material is allowed to express itself naturally.
