Frequently Asked Questions
How are vegan macarons made?
Making vegan macarons follows a similar process to traditional macarons, replacing egg whites with whipped aquafaba. This plant-based preparation, which replaces traditional Italian meringue, is perfect for achieving smooth and shiny shells.
What can be used to replace eggs in macarons?
Eggs can easily be replaced with aquafaba (chickpea cooking liquid) for a vegan macaron recipe.
What is aquafaba and how can it be used as a vegan egg white substitute?
Aquafaba is the cooking liquid from legumes, primarily canned chickpeas. This thick liquid has remarkable foaming properties thanks to its protein and starch content. To use it, whip it with an electric mixer until stiff peaks form , similar to whipping egg whites. You can reduce the liquid by cooking to concentrate it before using it in your sweet recipes.
Are these macarons vegan and also suitable for vegetarians?
Yes, this recipe is suitable for both vegans and vegetarians. No animal-derived ingredients are used in this recipe.
How long can yuzu macarons be stored?
These vegan yuzu macarons will keep for up to 10 days in the refrigerator in an airtight container. This extended shelf life is due to the absence of eggs in the vegan recipe. At room temperature, consume them within 3 days. Remove them from the refrigerator 15 minutes before serving to allow them to regain their soft texture.
How to make vegan vanilla macarons?
Follow the same recipe for the macaron shells, but make a vegan ganache recipe , with Amatika 35% (vegetarian alternative to white chocolate) and quality Madagascar vanilla.
How to make a lactose-free macaron filling/ganache?
The ganache suggested in this recipe is vegan and therefore lactose-free.
Do these macarons contain dairy products?
No, this macaron recipe does not contain butter, milk or cream.
