Assembly and finishing
Prepare the day before
- In a lightly oiled, preheated 22cm diameter crepe pan, spread 180g of crepe batter and cook over low heat. Flip the crepe and finish cooking. Repeat for the remaining crepes.
- For the top layer of crepe, spread 180g of crepe batter in a crepe pan and bake at 180°C (350°F) for about 10 minutes, until golden brown. Once cooked, slide it off the pan without flipping it to keep the top intact. Refrigerate for one hour.
- If necessary, lightly trim each crepe with a knife. Reserve the prettiest crepe for the top of the cake.
- Spread 100g of clementine compote on the first crepe. Using a piping bag fitted with an 8mm nozzle, pipe 100g of crystallized Manjari 64% cream, starting by making a ring on the outside of the crepe.
- Add the next crepe on top and repeat until all the crepes and creamy filling are used up. Add the last crepe to the cake and decorate. Refrigerate for 30 minutes until set.
Frequently Asked Questions
Can this crepe cake be made the day before?
Preparing a crepe cake in advance is recommended for best results. Assemble your cake with the cooled crepes, layer them with your filling, then wrap in plastic wrap and refrigerate for 3 hours. For optimal texture, add fresh decorations only when serving.
How to make the perfect first crepe for a crepe cake?
For a perfect first crepe, preheat your pan over medium heat for 2-3 minutes before use. Lightly grease the surface with a paper towel soaked in oil, then pour a small amount of batter into the center. The crepe should be thin and even to blend seamlessly into your dish. Wait until the edges start to lift naturally before flipping it.
What should I do if the Manjari chocolate cream doesn't crystallize?
To encourage the Manjari cream to crystallize, blend the mixture again with an electric mixer to perfect the emulsion, then refrigerate, covered with plastic wrap. Ensure the initial temperature of the mixture reaches 45-50°C when incorporating the melted chocolate into the cream. Rapid chilling in the freezer for 30 minutes can also help trigger the crystallization process.
Apple, strawberry, lemon: can clementines be replaced with other fruits?
You can adapt the fruit compote to suit your preferences and the season. Opt for strawberries, raspberries, or blueberries in the summer, or caramelized apples, pears, or mangoes in the winter. Simply adjust the amount of sugar according to the natural acidity of the fruit you choose.
How to store the crepe cake once it's finished?
Place your crepe cake in an airtight container in the refrigerator for up to 48 hours. To preserve its freshness, wrap it carefully in cling film, making sure to cover the edges completely. Remove it from the refrigerator 30 minutes before serving to allow it to regain its soft texture.
How long does this crepe cake keep?
A crepe cake is best enjoyed within 24 hours of preparation for optimal flavor. Store it in the refrigerator between 4 and 6°C, away from strong-smelling foods. Before serving, let it rest at room temperature for 15 minutes. The pastry cream filling requires special attention: avoid temperature fluctuations and condensation, which could alter its texture.
