Ingredients:

  • 6.34 oz / 180 g Soy yogurt
  • 3.17 oz / 90 g Raw cane sugar
  • 3.17 oz / 90 g All-purpose flour
  • 0.141 oz / 4 g Starch
  • 0.705 oz / 20 g Almond flour
  • 0.141 oz / 4 g Baking powder
  • 0.88 oz / 25 g Cocoa powder
  • 0.035 oz / 1 g Fleur de sel
  • 1.76 oz / 50 g AMATIKA 35% or AMATIKA 46%
  • 0.705 oz / 20 g Grapeseed oil
  • 1.23 oz / 35 g Flavorless coconut oil
  • 3.52 oz / 100 g Lightly toasted and chopped pecans
  • 3.52 oz / 100 g AMATIKA 35% or AMATIKA 46%

Steps:

  • Whisk together the soy yogurt and raw cane sugar.
  • Mix together the all-purpose flour, starch, almond flour, baking powder, cocoa powder and salt.
  • Add the dry ingredients to the first mixture.
  • Melt together the 1.76 oz / 50 g of AMATIKA 35% or AMATIKA 46%, grapeseed oil and flavorless coconut oil.
  • Add this mixture to the first, then stir until smooth.
  • Finally, use a spatula to fold in the pecans and the 3.52 oz / 100 g of unmelted AMATIKA 35% or AMATIKA 46%.
  • Line the pan with parchment paper or grease with oil, pour into a standard 8 × 8 in (20 × 20 cm) brownie pan and bake at 340°F (170°C) for approximately 30 minutes. After 25 to 30 minutes, insert the tip of a knife into the center: it should come out with a few moist crumbs. The brownie will firm up as it cools to room temperature. Let it cool before cutting and serving.
  • Store these vegan chocolate brownies in an airtight container for up to 3 days at room temperature. They can also be frozen if needed.
