Passion fruit couverture is a preparation based on passion fruit and cocoa butter, which can be worked like chocolate. History of the Inspiration range
In 2016, Valrhona innovated and offered chefs the opportunity to work with fruit like chocolate. The complex blend of cocoa butter, sugar and passion fruit reveals intense aromas and color that are completely natural. The absence of preservatives, colorings or artificial flavors now allows all pastry enthusiasts to create naturally fruity creations. This range was awarded the Grand Prix de l'Innovation at SIRHA 2017.
