Strawberry covered strawberries

1. Strawberry Inspiration coating
Ingredients:
- 200 g Strawberry Inspiration
Prep time: 15 min
Steps:
- Temper the Strawberry Inspiration by carefully melting it, then following the tempering process.
- Heat the Strawberry Inspiration to 95-104˚F, then cool it to 81-82˚F before heating it back up to 86-88˚F.
2. Chocolate covered strawberries assembly
Ingredients:
- 12 ea fresh market strawberries (stem on)
- AN freeze dried strawberries
- AN toasted sesame seeds
- AN olive oil powder
- AN coconut
- AN violets
- AN bourbon sugar
- AN freeze dried pineapples
Prep time: 20 min
Rest time: until the couverture hardens
Steps:
- Dip the strawberries into the Strawberry Inspiration couverture, then sprinkle with the remaining ingredients as desired.
- Lay the chocolate covered strawberries on parchment paper to set.
