Oriado glazed madeleines recipe

1. Madeleines
Ingredients:
- 1 ea Lemon
- 5.29 oz / 150 g Sugar
- 0.88 oz / 25 g Honey
- 4.585 oz / 130 g Eggs
- 7.5 oz / 213 g All-purpose flour
- 0.17 oz / 5 g Baking powder
- 2.99 oz / 85 g Heavy cream
- 4.58 oz / 130 g Butter

Steps:
- Zest the lemon with the sugar. Mix the honey and the eggs. Add it to the sugar and zest.
- Sift the flour with baking powder and add it to the previous mixture. Melt the butter. Add the cream and then the butter.
- Leave the dough to rest for 24 hours in the refrigerator. Bake at 374°F (190°C) and then lower the temperature to 338°F (170°C) for 7 to 8 minutes. Let cool on the baking rack once golden brown.
2. Dark chocolate glaze
Ingredients:

Rest time: until chocolate hardens
Steps:
- Melt Oriado 60% Dark Chocolate.
- Glaze the madeleines and place them in the original pan to make a crunchy, glossy coating.
