Raspberry Inspiration Pistachio Brioche Morning Rolls Recipe

1.The Starter
Ingredients :
- 1/3 cup warm whole milk
- 2 1/4 tsp active dry yeast
- 1 ea large egg
- 2 cups all-purpose flour, divided
- 1 1/3 cups all-purpose flour
- 3/4 cup butter at room temperature
Prep time: 10 min.
Rest time: 30 min.
Steps:
Mix Ingredients : In a standing mixer, combine the whole milk, yeast, 1 cup of flour, and a large egg. Mix lightly until the ingredients are just combined.
Cover with Flour : Sprinkle the remaining cup of flour over the mixture, ensuring that the starter is completely covered.
Let Stand : Allow the mixture to stand at room temperature for approximately 30 minutes, or until you notice the flour on top beginning to crack.

2. The Brioche Dough
Ingredients :
- 1/3 cup sugar
- 1 tsp kosher salt
- 4 ea large eggs, lightly beaten
Prep time: 20 min.
Rest time: 2h
Steps:
Add Ingredients : To the starter, add sugar, salt, eggs, and flour.
Knead Dough : Attach the dough hook to the mixer and knead on medium/low speed until the dough comes together. Then, increase to medium speed and knead for 15 minutes. The dough should start pulling away from the sides and make a slapping sound.
Incorporate Butter : Turn the mixer down to low and add room temperature butter, 1 tablespoon at a time.
Continue Kneading : Knead the dough on medium speed for an additional 15 minutes. Ensure you complete the full kneading time.
Let the Brioche Rise : Place the dough in a greased bowl, cover with plastic wrap, and let it rise for about 2 hours or until it doubles in size.
3. The Filling
Prep time: 10 min.
Melt Raspberry Inspiration : Place the Raspberry Inspiration in a heatproof bowl and heat in the microwave in 20-second increments. Stir between each increment until fully melted.
Heat Raspberry Jam : In a saucepan over medium heat, combine the raspberry jam with one tablespoon of water. Stir until well mixed and heated through.
Create Emulsion : Slowly pour the heated raspberry jam mixture over the melted Raspberry Inspiration.
Blend : Use an immersion blender to blend the mixture thoroughly, ensuring a complete emulsion.

4.The Glaze
Ingredients :
- 1 cup confectioners’ sugar
- 2 TBSP lemon juice
Prep time: 5 min.
Prepare Glaze : Mix confectioners’ sugar and lemon juice together.
4. The Assembly
Prep time: 20 min.
Cook time: 15-17 min.
Rest time: 15 min.
Steps:
Prepare Dough : Turn the dough out onto a well-floured surface. Sprinkle with flour and gently pat down.
Roll Out Dough : Roll the dough into a 20-inch x 12-inch rectangle.
Add Filling : Spread the raspberry filling evenly over the dough and sprinkle with chopped pistachios.
Roll Dough : Roll the dough from one long side to the other, pinching the end to seal the roll. Note that the dough will be soft, and this step may be a bit messy.
Cut Rolls : Trim the ends of the roll and cut into 12 even pieces using a sharp knife.
Arrange Rolls : Place the rolls in a well-oiled 9x12 baking dish. Cover and let them proof for 15 minutes.
Bake : Bake the rolls for 15-17 minutes, or until their internal temperature reaches 190°F.
Glaze Rolls : Drizzle the glaze over the baked rolls.
