To celebrate the 40th anniversary of its iconic Guanaja 70% chocolate, Valrhona has developed this quick and easy recipe for homemade Guanaja 70% dark chocolate molten fondant. This recipe makes 7 individual fondant cakes.  


You will need:

    • Molds measuring 7.5 cm in diameter by 4.5 cm in height,
    • Chicken bowl,
    • Maryse,
    • Whip

1. Guanaja 70% Chocolate Fondant Mix

Ingredients :

  • 150g (5.29 oz) Whole Milk
  • 220g (7.76 oz) Guanaja 70%
  • 250g (8.82 oz) Whole Eggs
  • 110g (3.88 oz) Granulated sugar or powdered sugar
  • 65g (2.29 oz) T65 Flour
  • 3g (0.11 oz) Baking powder
  • 1g (0.04 oz) Salt


Steps

      • Heat the milk until it just begins to simmer.
      • Emulsify with a whisk by pouring over the melted GUANAJA 70% chocolate to make a ganache.
      • Incorporate the eggs, which have been previously mixed with the sugar.
      • Add the flour, baking powder and salt.
      • Ideally, refrigerate for 12 hours.
      • Using a piping bag, fill 80g of fondant into your molds.

2. Cooking

Bake at 190°C for 12 minutes for a soft texture. Bake at 180°C for 9 minutes for a medium texture.
