Recipe for a granola breakfast bowl, 100% plant-based and gluten-free.

1 - Dried fruit "milk"
Ingredients :
- 30g (1.06 oz) whole almonds
- 20g (0.71 oz) cashew nuts
- 1 Norohy vanilla bean
- 200g (7.05 oz) water
- 4 dried dates
Preparation time: 8 min
Soaking time: 8 hours
Prepare the day before
- In a container, add the water, almonds, cashews and vanilla bean seeds.
- Leave to soak for a minimum of 8 hours in the refrigerator.
- In the mixing bowl, add the dates and soaked dried fruit along with the soaking water from the dried fruit.
- Blend and then filter the mixture using a sieve.
- Reserve the "remaining" dried fruit pieces in the bottom of your sieve and bake them at 160°C for 15 minutes to dry them.
- Set aside the resulting powder.
- Keep the "milk" in the refrigerator.
- It is possible to replace whole almonds with hazelnuts or walnuts in the same proportions.
2 - Granola
Ingredients :
- 60g (2.12 oz) dried dried fruit powder, reserved from the previous step
- 30g (1.06 oz) Cranberries
- 10g (0.35 oz) Chia seeds
- 50g (1.76 oz) Oat flakes
- 50g (1.76 oz) Honey
- 250g (8.82 oz) Valrhona chocolate chips

Prepare the day before
- In a container, mix the honey, dried dried fruit powder, cranberries, chia seeds and oat flakes.
- Spread on a baking sheet lined with parchment paper and bake at 160°C for 10 minutes.
- Allow to cool completely and add the chocolate chips.
- The recipe can be multiplied to make a larger quantity of granola. It keeps perfectly for 4-5 days in a jar.
3 - The assembly
